The attached photos show a cake i made for my daughters 1st birthday and the wedding cake i made for my cousin. A long time ago i baked cakes with my Grandma, its the  Lamingtons I remember the most. Would love to be able to do that with her one more time.

Actually that was not the first time I baked a cake on my own, but definitely the time I remember the most; It was my birthday and I didn't have certain plans for the day, and surprisingly staying at home for the whole day didn't seem bad to me. Spontaniously my friend texted me to say he would come and visit me and we ended up making a cake!

I absolutely enjoy baking! I didnt prefer the instant mixes so I always bake from scratch. 

It's kind of like a therapy for me. Would love to try to bake something challenging soon!

The first time a baked a cake with no instant mixes was when I was about 5 years old. My grandmother told me to put the ingredients in and she was mixing with a good old wooden spoon. I miss that.In my family we all have a big passion for baking and cooking even tough nobody in my family is a real life chef. But still we eat great food every day and that's a gift to our lives.

This actually ended up being more of an act of desperation that a bucket list item, but here is how it happened:

This was when I was still living at home as I was studying at university, and living the life of a poor student. The parents decided that they would go on an overseas holiday for a week, so they loaded the freezer and fridge with a "weeks" worth of food. I use quotation marks, because that is obviously following recommended serving sizes.

Needless to say, 2 days later, I had eaten all the meat, 2 more days later I had eaten all of the vegetables. With 3 days to go, and not really wanting to go food shopping, I resorted to emergency baking. I looked at the recipe book, grabbed the ingredients, and then just completely guessed how much of each and how to mix/bake. In the end, I had a very moist banilla cake (banana + vanilla if you couldn't figure it out) that was delicious. 

Looking at the recipe book after, it turns out I used nowhere near enough flour, but that would have totally dried out my cake. I'm happy with how it turned out!
