I feel inadequate every time I use a store bought crust or pie, so I at least want to be able to make one. After all, women have been making them for years. I don't just want to make a pie. I want to make a GREAT pie! I can also use the skill to make one of my favorite meals, a quiche.
I took a class for making quiche led by Chef Derek Nettles, at Venue 104 Bistro and Catering. It was offered on Groupon. It was easier than I realized. It took me a few tries at home to really perfect it. My best pie I've made on my own in my home kitchen was a peach pie, made from peaches from a fruit stand in Stratford, OK, the self-proclaimed Peach Capitol of the World. But my favorite thing to make, now that I can make a flaky crust is a quiche made with whatever meat, cheeses & vegetables I have in the kitchen.
